Non-Gaussian (NG) indicates divergence from the Gaussian function. The CMB anisotropies, for example are approximately Gaussian, but at some level of detail, may diverge. This is currently expected, as a consequence of inflation, a theory that explains the necessary high-density regions needed to form today's gas clouds, galaxy clusters, etc. This is known as primordial non-Gaussianity.
